About Us

the Story

In September of 2017, Casey Greabeiel and Craig Lewis purchased Salted Brick from the Proprietor & Chef Jason Leizert. Salted Brick had built a strong reputation as a quick serve culinary destination specializing in house made charcuterie. Casey and Craig envisioned keeping that concept by day but becoming a wine bar at night, specializing in smaller Okanagan Wineries. The rules for wine and staff selection were simple, wineries couldn’t be big corporate entities with strangle holds at the BCLB. When it came to staff the one rule was they had to know more about wine then Casey and Craig (which wasn’t a lot then and is only slightly more now).

Salt & Brick’s first employee was Chef James Holmes affectionately known as ChefyPoo to most of his followers. Chef James had a crazy vision for the culinary program and he quickly started implementing changes, eliminating staple dishes and replacing them with his own unique creations. The menu was focused on elevated share plates and it evolved into a true fresh sheet menu over the course of about 6 months of experimentation. The menu is created daily with many dishes only ever being featured for one night.

In April 2018 the restaurant was shut down for a renovation and a full rebrand. Salted Brick became…… Salt & Brick. The only things that remained were the Rational Oven, the original brick and the beautiful wood beams. The charcuterie fridge became a wine fridge, the grab and go was replaced with an iconic neon sign and the dark wallpaper was replaced with a vibrant floral pattern that has become signature to Salt & Brick. The new restaurant was almost instantly a hit with locals and tourists alike. With the daily fresh sheet menu and the opportunity to sit at our Chef Bar really serving as the basis for Okanagan’s most unique culinary adventure.

Notoriety

In October of 2020, Salt & Brick hosted Food Network star, John Catucci and his new show, Big Food Bucket List, this was a massive achievement for the entire team and when the episode aired in February, Salt & Brick got national attention which was much needed as Salt & Brick like all other restaurants was doing everything they could to navigate the covid 19 pandemic.

Today

Current Head Chef, Erik Fassbind took over the concept of Salt & Brick in July 2021 and is incredibly proud of what his team has been able to do with 958 square feet, 5 induction burners an old but reliable Rational Oven and a lot of blood, sweat and tears from our all-star team.
